Steel Cut Oats

Ingredients

  • 1 part steel cut oats
  • 3 parts water
  • 1 pinch salt (about 1/8 t LG grain salt per 1/3c or 1/4c oats)
  • butter
  • toppings – fruit, yogurt, etc. Apple Cinnamon* – see instruction #4

Instructions

  1. Melt butter in small saucepan.
  2. Sauté oats in butter (enough to lightly coat the oats) for several minutes. Should have a nutty aroma.
  3. Add boiling water. Add a pinch of salt for each part of oats.
  4. Stir occasionally for 20 minutes. Should be on the drier side, rather than porridge-like.
  5. *At around the 10 min mark, make sure you’re watching & stirring it. It starts to stick to the bottom of the pan at this point.
  6. Top with nuts, banana, vanilla yogurt, etc.

OR: (Apple Cinnamon)

*Apple Cinnamon Oatmeal*: Add cinnamon to oats while sautéing, before water. Omit the salt. Half way through cooking, add half a chopped (peeled) apple (apple peel gets a little chewy/tough if you leave it on). Also add a spoonful of brown sugar with the apple.
