Pizza Sauce

Ingredients

  • 1 onion
  • 2 garlic cloves
  • 4 tbsp tomato paste
  • 3 ripe tomatoes (or 1 can diced tomatoes)
  • 1 tbsp oregano
  • 1 tbsp basil
  • 1 tsp fennel (can be lightly ground)
  • 1/2 tsp salt
  • 1 tsp sugar
  • 1/8 tsp pepper
  • 2 tbsp butter
  • 1 tbsp oil

Instructions

  1. Finely mince the onion and grate the garlic.
  2. Sautée the onions in a tbsp oil, add the garlic and tomatoes paste and cook for another minute. This will sweeten the tomato paste a little.
  3. Add the herbs to lightly toast them for a few seconds (don’t burn!).
  4. Add the tomatoes, salt, sugar and pepper and simmer the sauce over low heat for 10+ minutes.
  5. Cut up the butter, add it to the sauce and stir until the butter has melted. 

Notes

Other optional additions: chopped mushrooms, a teaspoon of miso or a splash of worcestershire or soy sauce.
