Pasta Salad Dressing

- 1/2 cup olive oil
- 1/3 cup red wine vinegar
- 3–4 tbsp lemon juice (juice of 1–2 lemons)
- 3 garlic cloves, minced
- 1 shallot, minced
- 2 tsp honey
- 2 tsp dijon mustard
- 1 tsp dried oregano
- 1 tsp dried basil
- 1 tbsp coarse salt
- 1 1/2 tsp freshly ground pepper
- 1/2 tsp red pepper flakes
Instructions
- Put all ingredients in a jar and shake well.
- This makes enough for 1kg of pasta plus veggies.
Notes
Add or subtract ingredients to taste.
