Molten Chocolate Cakes

Ingredients

Units Scale
  • Unsweetened baking cocoa
  • 6 oz semisweet baking chocolate, chopped
  • 1/2 cup butter
  • 2 tbsp butter
  • 3 whole eggs
  • 3 egg yolks
  • 1 1/2 cups powdered sugar
  • 1/2 cup flour

Instructions

  1. Heat oven to 450º F / 232° C.
  2. Grease bottoms & sides of 6 (6 oz) custard cups/ramekins with shortening; dust with cocoa.
  3. In 2 qt. saucepan, melt chocolate & butter over low heat, stirring.
  4. Cool slightly.
  5. In large bowl, beat all eggs with wire whisk until blended.
  6. Beat in 1 1/2 c. powdered sugar. Beat in melted chocolate mixture & flour.
  7. Divide among custard cups, place on cookie sheet.
  8. Bake 12-14 minutes, until sides & centers are soft (tops will be puffed & cracked).
  9. Let stand 3 minutes.
  10. Run small knife along sides to loosen.
  11. Place plate on top, flip, remove cup.
  12. Sprinkle with powdered sugar.
