Molten Chocolate Cakes

- Unsweetened baking cocoa
- 6 oz semisweet baking chocolate, chopped
- 1/2 cup butter
- 2 tbsp butter
- 3 whole eggs
- 3 egg yolks
- 1 1/2 cups powdered sugar
- 1/2 cup flour
Instructions
- Heat oven to 450º F / 232° C.
- Grease bottoms & sides of 6 (6 oz) custard cups/ramekins with shortening; dust with cocoa.
- In 2 qt. saucepan, melt chocolate & butter over low heat, stirring.
- Cool slightly.
- In large bowl, beat all eggs with wire whisk until blended.
- Beat in 1 1/2 c. powdered sugar. Beat in melted chocolate mixture & flour.
- Divide among custard cups, place on cookie sheet.
- Bake 12-14 minutes, until sides & centers are soft (tops will be puffed & cracked).
- Let stand 3 minutes.
- Run small knife along sides to loosen.
- Place plate on top, flip, remove cup.
- Sprinkle with powdered sugar.
