Mexican Chicken Marinade

Ingredients

  • 1/3 cup oil
  • 1/4 cup limes juice (approx. juice of 2, zest of 1)
  • 4 garlic cloves
  • 1 tbsp fresh parsley (or 1 t. dried parsley)
  • 1 tsp cumin
  • 1 tsp oregano
  • 1/2 tsp black pepper
  • 1 tsp chili powder
  • 1 tsp salt

Instructions

  1. Whisk all ingredients together
  2. Add marinade and chicken glass container and cover.
  3. Refrigerate 3 hrs to overnight.
  4. Cook chicken with some marinade. Slice for fajitas, tacos, burritos, etc.
