Marinated Tomatoes & Carrots

This is great pared with cashew cream, but would also be good on its own or on crostini as a bruchetta.

Ingredients

Scale
  • Tomatoes
  • Carrots

Marinade

  • 1 garlic clove, peeled + finely chopped or grated
  • 2 tbsp balsamic vinegar
  • 1/8 red onion, very finely chopped
  • 1 small handful of fresh basil, finely chopped
  • 1 lemon, juice only
  • olive oil
  • salt + pepper

Instructions

  1. Slice tomatoes in half-inch slices.
  2. Peel carrots with a vegetable peeler to get fine ribbons.
  3. Make marinade
  4. Place tomatoes in wide dish. Spoon marinade over tomatoes.
  5. Mix all together and pour about half over carrots in bowl. Mix to coat.
  6. Serve alone or with cashew cream and/or on good bread.
