Using mixer, cream butter and sugar until light & fluffy.
Add egg and vanilla/lemon. Mix until well blended.
With mixer on low, add flour until thoroughly blended.
Turn out dough onto work surface and divide into 2-3 equal portions. Form each into a rough disk. Flatten slightly (or roll to 1/4″ thick) between waxed paper.
Chill 20-30 minutes.
Cut with cookie cutters, place on cookie sheets.
Bake at 350° F / 175° C for 12-16 minutes. (15 on Silpat)
Cool completely on racks before icing.

These taste really yummy with the vanilla and lemon, and they hold their shape great. Perfect for cutouts!
