Ingredients

Units Scale
  • 3 cups flour
  • 1/2 tsp salt
  • 1 cup butter
  • 1 cup sugar
  • 1 egg
  • 1 tsp vanilla + zest of 1 lemon OR 2 tsp vanilla

Instructions

  1. Preheat oven to 350° F / 175° C
  2. Whisk together flour and salt. Set aside.
  3. Using mixer, cream butter and sugar until light & fluffy.
  4. Add egg and vanilla/lemon. Mix until well blended.
  5. With mixer on low, add flour until thoroughly blended.
  6. Turn out dough onto work surface and divide into 2-3 equal portions. Form each into a rough disk. Flatten slightly (or roll to 1/4″ thick) between waxed paper.
  7. Chill 20-30 minutes.
  8. Cut with cookie cutters, place on cookie sheets.
  9. Bake at 350° F / 175° C for 12-16 minutes. (15 on Silpat)
  10. Cool completely on racks before icing.

Notes

These taste really yummy with the vanilla and lemon, and they hold their shape great. Perfect for cutouts!
