Cutout Cookies

- 3 cups flour
- 1/2 tsp salt
- 1 cup butter
- 1 cup sugar
- 1 egg
- 1 tsp vanilla + zest of 1 lemon OR 2 tsp vanilla
Instructions
- Preheat oven to 350° F / 175° C
- Whisk together flour and salt. Set aside.
- Using mixer, cream butter and sugar until light & fluffy.
- Add egg and vanilla/lemon. Mix until well blended.
- With mixer on low, add flour until thoroughly blended.
- Turn out dough onto work surface and divide into 2-3 equal portions. Form each into a rough disk. Flatten slightly (or roll to 1/4″ thick) between waxed paper.
- Chill 20-30 minutes.
- Cut with cookie cutters, place on cookie sheets.
- Bake at 350° F / 175° C for 12-16 minutes. (15 on Silpat)
- Cool completely on racks before icing.
Notes
These taste really yummy with the vanilla and lemon, and they hold their shape great. Perfect for cutouts!
