Chicken Salad with Grapes, Apples, Dill & Pecans

Ingredients

Units Scale
  • 2 boneless skinless chicken breasts, boiled, diced (2-3)
  • 1 cup seedless red grapes, each cut in half
  • 1 cup salted cashews or pecans
  • 1 Gala apple, finely diced
  • 1/4 cup finely chopped red onion
  • 1/4 cup finely chopped green onions
  • 1 stalks celery
  • 1/2 cup mayo (1/2-1c)
  • 1 lime (1-2T)
  • 1 tbsp chopped fresh dill
  • salt and pepper to taste
  • optional (to taste) garlic salt, paprika, hot pepper powder, ground mustard

Instructions

  1. Boil or sautée Chicken.
  2. Cut in cubes.
  3. Mix everything together.
  4. Chill or just eat.
