Cherry Tomato Chicken

Ingredients

  • 2 boneless skinless chicken breasts
  • 1 tbsp olive oil
  • 1/3 cup dry white wine
  • 4 oz cherry tomatoes
  • 2 cloves garlic, thinly sliced
  • 1/2 tbsp butter

Instructions

  1. Season chicken. In large skillet, cook half the chicken in half the oil over medium-high, 4 to 6 minutes per side.
  2. Add wine, tomatoes, and garlic to skillet.
  3. Simmer until tomatoes burst and sauce thickens slightly, 5 to 7 minutes.
  4. Off heat, swirl in butter. Season sauce; spoon over chicken.
