Cauliflower Cheesy “Bread”

Ingredients

  • 1/2 head of cauliflower
  • 1/2 cup mozzarella cheese, dry, shredded
  • 1/2 cup parmesan cheese, shredded
  • 1 egg
  • 1 tbsp garlic, minced
  • 1 tbsp dried oregano
  • 1/2 tbsp fresh basil, chopped
  • 1 tbsp fresh parsley, chopped
  • 1 tsp salt
  • 1/2 tsp pepper
  • 3/4 cup mozzarella cheese, dry, shredded

Instructions

  1. Preheat oven to 200°C.
  2. Make cauliflower ‘rice’ in food processor.
  3. Spread in glass baking pan. Bake 20 mins.
  4. Let cool 15 minutes.
  5. Put cauliflower rice in a tea towel. Squeeze out moisture. You should get about 1/2 – 1c liquid.
  6. In large bowl, mix everything together except the final 3/4c of mozzarella.
  7. Press into loaf pan (lined with parchment) or on a parchment lined baking sheet.
  8. Bake 12 minutes at 425°F / 220°C.
  9. Remove from oven, and add remaining mozzarella cheese.
  10. Return to oven until cheese is melted and browning a bit on top (5-10 mins).
  11. Remove from oven and let cool 5 minutes before cutting.
