Broccoli Fritters

- 1 head of broccoli
- 1 large egg
- 1/2 onion, minced
- 2 tsp garlic, minced
- 1/3 cup shredded cheese (parm, cheddar, mozz, feta, etc)
- 1/3 cup flour (or almond flour)
- 1 tsp salt
- 1/4 tsp pepper
- Other Herbs/Spices: fresh or dried. ex: dill, pepper flakes, cilantro, paprika, etc.
Instructions
- Preheat oven to 200° C / 400° F. Line baking sheet with parchment.
- Roughly chop the broccoli. Peel and discard the hard parts of the stem, and chop the stem also. Steam the broccoli and stem pieces until soft (but not mushy).
- Add broccoli to food processor and pulse a few times until the broccoli is chopped.
- Add in the eggs, onion, garlic, flour and Parmesan. Pulse again a couple of times until well combined.
- Add salt & pepper. *herbs & spices can be added/changed. See under Ingredients.
- Form (pancake disks or slightly mounded) 8-10 fritters on the prepared baking sheet, making sure they don’t touch each other. Brush with a light coating of olive oil.
- Bake for 12-15 minutes on one side. Flip and bake another 10-12 mins until golden. (Total bake time: 20-25 mins)
- Alternatively: Pan fry the fritter pancakes (1/3″ thick) in oil, 2-3 minutes per side.
- Serve with a squeeze of lemon and with a dipping sauce! Good options:
- *My preferred sauce: plain greek yogurt + hot sauce + garlic.

- Tzatziki
Notes
This recipe can also be made using cauliflower!
