Ingredients

Units Scale
  • 15 oz black beans
  • 1 cup fresh or frozen corn kernels
  • 1 medium tomato
  • 1 small bell pepper (yellow or red is best)
  • 1/2 small red onion, diced small
  • 1 garlic clove, minced
  • 1/2 cup cilantro, finely chopped
  • 2 canned chipotle chili in adobo sauce, finely chopped, + 2 T adobo sauce
  • 1 lime, zested
  • 1/2 lime juice
  • 1/4 tsp salt

Instructions

  1. Mix all ingredients in bowl.
  2. Cover & refrigerate at least 30 minutes to allow flavors to meld.
  3. Serve with tortilla chips.
