Ingredients

  • 1 very ripe banana
  • 1 large egg
  • 30 g melted butter
  • 50 g brown sugar
  • 1/2 tsp vanilla
  • 1/2 tsp cinnamon
  • 60 g flour
  • 1/4 tsp baking soda
  • 1/2 tsp baking powder
  • 1/8 tsp salt
  • turbinado or cinnamon sugar for top

Instructions

  1. Preheat oven to 425° F / 220° C.
  2. Mash the banana in a bowl. Some lumps are ok. Add the egg, sugar and melted butter. Stir to combine.
  3. Add cinnamon. Sprinkle baking powder & soda over wet ingredients to avoid clumps, or mix with flour. Add flour and mix just until combined. Don’t overmix.
  4. Spoon into 4 parchment-lined muffin tins, and sprinkle turbinado or cinnamon sugar generously on top.
  5. Bake at 220° C for 5 minutes. Do not open the oven door. Lower the heat to 180° C / 350° F and bake another 12-15 minutes.
