Banana Bread

So good. Don’t skimp on the banana – need at least 4, and they need to be ripe so the bread stays moist.

Ingredients

  • 4 very ripe bananas
  • 75 g melted butter (1/3 c)
  • 1 cup sugar (can reduce to 3/4c) (150-200g)
  • 1 egg, beaten
  • 1 tsp vanilla
  • 1 tsp baking soda
  • 1 pinch salt
  • 187 g flour (1.5 c)
  • plus cinnamon & nutmeg if desired

Instructions

  1. No need for a mixer for this recipe. Preheat the oven to 350°F (175°C). With a wooden spoon, mix butter into the mashed bananas in a large mixing bowl.
  2. Mix in the sugar, egg, and vanilla.
  3. Sprinkle the baking soda and salt over the mixture and mix in.
  4. Add the flour last, mix. Pour mixture into a buttered 4×8 inch loaf pan.
  5. Bake for 1 hour. Cool on a rack. Remove from pan and slice to serve.
