Baked Oatmeal

Ingredients

  • 210 ml milk
  • 2 eggs
  • 60 ml (1/4 c) maple syrup
  • 23 T brown sugar
  • 2 T (~32 g) butter, melted
  • optional mashed banana
  • 1/2 t baking powder
  • 1 t cinnamon
  • 1 t vanilla
  • 1/4 t salt
  • 3/4 c frozen berries (about 125g)
  • 1/2 c nuts, optional

Instructions

  1. Preheat oven to 350° F / 180° C.
  2. Grease 8×8 glass pan or casserole dish.
  3. Whisk all ingredients together in 1 large bowl.
  4. Pour into baking pan.
  5. Bake uncovered for 35 minutes or until the center appears almost set. For drier and more solid baked oatmeal, bake until center has set. If it’s a smaller but deeper dish, add another 10 mins.
  6. Cool for a few minutes before serving. Cover leftovers tightly and refrigerate for up to 1 week.
