Green Pea Soup

Ingredients

Units Scale
  • 1/2 tbsp butter
  • 1 medium onion (or green onions)
  • 3 cloves of garlic
  • 500 g baby frozen peas
  • 150 g frozen spinach
  • 4 cups chicken or vegetable broth
  • 1 tsp thyme
  • 1 tsp salt and pepper, or to taste
  • 1/2 cup greek yogurt (optional)
  • optional dash of hot pepper flakes

Instructions

  1. Melt the butter in a large pot over medium-high heat. Add the onion and garlic and cook until the onion is transparent, about 5 minutes.
  2. Add the peas, spinach, stock, and thyme and bring nearly to a boil. Reduce heat and simmer 10 minutes.
  3. Blend the soup with an immersion blender. Return the soup to the heat and warm through. If using, add the yogurt then season to taste with salt.
  4. Top with optional:
  • Drizzle of good quality olive oil
  • Feta cheese crumbled
  • Microgreens
  • Fresh or frozen peas (thawed)
