Green Pea Soup

- 1/2 tbsp butter
- 1 medium onion (or green onions)
- 3 cloves of garlic
- 500 g baby frozen peas
- 150 g frozen spinach
- 4 cups chicken or vegetable broth
- 1 tsp thyme
- 1 tsp salt and pepper, or to taste
- 1/2 cup greek yogurt (optional)
- optional dash of hot pepper flakes
Instructions
- Melt the butter in a large pot over medium-high heat. Add the onion and garlic and cook until the onion is transparent, about 5 minutes.
- Add the peas, spinach, stock, and thyme and bring nearly to a boil. Reduce heat and simmer 10 minutes.
- Blend the soup with an immersion blender. Return the soup to the heat and warm through. If using, add the yogurt then season to taste with salt.
- Top with optional:
- Drizzle of good quality olive oil
- Feta cheese crumbled
- Microgreens
- Fresh or frozen peas (thawed)
