Pizza Sauce
- Yield: 1–2 pizzas 1x
Ingredients

- 1 onion
- 2 garlic cloves
- 4 tbsp tomato paste
- 3 ripe tomatoes (or 1 can diced tomatoes)
- 1 tbsp oregano
- 1 tbsp basil
- 1 tsp fennel (can be lightly ground)
- 1/2 tsp salt
- 1 tsp sugar
- 1/8 tsp pepper
- 2 tbsp butter
- 1 tbsp oil
Instructions
- Finely mince the onion and grate the garlic.
- Sautée the onions in a tbsp oil, add the garlic and tomatoes paste and cook for another minute. This will sweeten the tomato paste a little.
- Add the herbs to lightly toast them for a few seconds (don’t burn!).
- Add the tomatoes, salt, sugar and pepper and simmer the sauce over low heat for 10+ minutes.
- Cut up the butter, add it to the sauce and stir until the butter has melted.
Notes
Other optional additions: chopped mushrooms, a teaspoon of miso or a splash of worcestershire or soy sauce.
