Ingredients

  • 2 tbsp butter
  • 1 small onion, diced
  • 4 garlic cloves, minced
  • 2 cans pinto or black beans, drained & rinsed
  • 1/2 cup vegetable stock
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1/2 tsp oregano
  • 1 tbsp fresh lemon or lime juice
  • salt & pepper
  • 2 tbsp fresh cilantro, chopped

Instructions

  1. Heat 1 tablespoon butter in a saucepan over medium-high heat. Add the onion and sauté for 5-8 minutes, stirring occasionally, until softened. Add the garlic and sauté for 1-2 more minutes, stirring occasionally, until cooked and fragrant.
  2. Add in the pinto beans, stock, chili powder, cumin and oregano. Stir to combine. Continue cooking until the mixture reaches a simmer.
  3. Reduce the heat to low and remove the lid. Use a potato masher or the back of a fork to mash up about at least half of the beans to your desired consistency. Continue to cook the beans, uncovered, stirring often, for 3 more minutes.
  4. Stir in remaining tablespoon of butter until melted and well combined. Season with cilantro, citrus juice, salt and pepper to taste.
