Rhubarb Pie

Crust
- 1 cup flour
- 5 tbsp powdered sugar
- 1/2 cup butter, slightly softened
Filling
- 2 eggs, beaten
- 1 1/2 cups sugar
- 1/4 cup flour
- 3/4 tsp baking powder
- 1 pinch salt
- 3 cups rhubarb
Instructions
Crust
- Combine ingredients, but don’t overwork the dough too much.
- Press into pie pan.
- Bake 10-15 min, @ 350º F
Filling
- Mix first ingredients well. Then add rhubarb.
- Fill pie crust.
- Bake @ 350º F for 35 minutes or until center is firm.
