Meat & cheese. That’s pretty much it.

Ingredients

Units Scale
  • 1 lb ground beef (or a bit less)
  • 1 small onion, chopped (optional)
  • 3 tbsp taco seasoning (see below)
  • 4 eggs
  • 3/4 cup heavy cream (180 ml)
  • 3 garlic cloves, minced
  • 1 cup shredded cheese (cheddar is great, dry mozzarella, comté, etc)
  • Optional: 1/4c salsa added to cream & eggs

Taco Seasoning (makes more than needed for this recipe)

  • 2 tbsp chili powder
  • 1 tbsp paprika
  • 1 tbsp coarse salt
  • 1 tbsp ground black pepper
  • 2 tsp cumin
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried oregano
  • 1/2 tsp cayenne pepper

Instructions

  1. Preheat oven to 350°F / 180°C.
  2. Either do everything in dutch oven (what I did), or grease 9″ glass pie pan.
  3. Brown the ground beef (with onion, if using) in a large skillet/dutch oven over medium heat until no longer pink about 7 minutes, breaking up any clumps with a wooden spoon.
  4. Add the taco seasoning and stir until combined. Spread the beef mixture in the greased pie pan.
  5. In separate bowl, combine the eggs, cream, and garlic. Pour slowly over the beef mixture in the pan. Optional: Add a bit of S & P to this mixture (seasoning from meat seems to be enough though).
  6. Sprinkle with the cheese and bake for 30 minutes or until the center is set and the cheese is browned.
  7. Remove from the oven and let sit for 5 minutes before serving.
