Turkey and Dried Cherry Pasta Salad

Pasta Salad
- 1 lb bowtie pasta
- 1 tsp olive oil
- 8 oz smoked turkey breast, cut into 1/2″ cubes
- 5 1/2 oz dried cherries (about 1c)
- 1/2 cup yellow onion, diced
- 1/2 cup celery, diced
- 1/2 cup whole almonds (1/2-1c)
Poppy Seed Dressing
- 2 cups mayo
- 2 tsp dijon mustard
- 1/4 cup powdered sugar
- 2 tbsp champagne vinegar
- 2 tbsp water
- 1/2 tsp black pepper
- 2 tbsp poppy seeds
- 2 tsp salt
Instructions
- Mix together all dressing ingredients and set aside.
- Cook pasta al dente, rinse in cold water, toss in olive oil & cool completely.
- Combine pasta, turkey, cherries, celery & half of almonds in large bowl. Mix in (half?) dressing until coated.
- Let sit for a few hours or overnight so the cherries can absorb the liquid & plump up.
- Add additional dressing if too dry
- Top with remaining almonds before serving.
