Baked Oatmeal

- 210 ml milk
- 2 eggs
- 60 ml (1/4 c) maple syrup
- 2–3 T brown sugar
- 2 T (~32 g) butter, melted
- optional mashed banana
- 1/2 t baking powder
- 1 t cinnamon
- 1 t vanilla
- 1/4 t salt
- 3/4 c frozen berries (about 125g)
- 1/2 c nuts, optional
Instructions
- Preheat oven to 350° F / 180° C.
- Grease 8×8 glass pan or casserole dish.
- Whisk all ingredients together in 1 large bowl.
- Pour into baking pan.
- Bake uncovered for 35 minutes or until the center appears almost set. For drier and more solid baked oatmeal, bake until center has set. If it’s a smaller but deeper dish, add another 10 mins.
- Cool for a few minutes before serving. Cover leftovers tightly and refrigerate for up to 1 week.
