A delicious pasta that highlights caramelized onions, balsamic, and garlic. Feel free to include mushrooms, or a protein of choice.

Ingredients

Units Scale
  • 1 tbsp Olive Oil
  • 2 large Onions (yellow/white)
  • 5 cloves Garlic into thin slices
  • 2 tbs Italian Seasoning (Basil, Oregano, Thyme)
  • 1/2 tsp Red Pepper Flakes
  • 1/4 cup of sun dried tomatoes, julienned/sliced
  • 2 tbsp Balsamic Vinegar
  • 1 tbsp Soy Sauce
  • 1/2 cup of Cream
  • 250 grams of fav pasta
  • 1 cup reserve pasta water
  • 1/4 cup minced fresh parsley

Instructions

  1. Add thinly chopped onions to a pan of olive oil at medium heat. Cover generously with salt.
  2. Cook the onions down until caramelized, adding water as needed to keep them from sticking.
  3. Once onions are nearly ready add sliced garlic to the pan. This is also the time to start cooking the pasta.
  4. Stir into your golden and caramelized onions the cream, balsamic, soy sauce, herbs, red pepper flakes, and julienned tomatoes.
  5. Let the onions and sauce simmer for 5 minutes while the pasta finishes cooking.
  6. Strain the pasta reserving one cup of water.
  7. Fold the pasta into sauce keeping it on the heat. Add reserved water to maintain divine level of sauciness.
  8. Plate and top with optional parmesan.

Notes

It takes a long time to caramelize the onions down (30+ minutes – Paul may not be the fastest/best at this).
