Balsamic Caramelized Onion Pasta
A delicious pasta that highlights caramelized onions, balsamic, and garlic. Feel free to include mushrooms, or a protein of choice.

- 1 tbsp Olive Oil
- 2 large Onions (yellow/white)
- 5 cloves Garlic into thin slices
- 2 tbs Italian Seasoning (Basil, Oregano, Thyme)
- 1/2 tsp Red Pepper Flakes
- 1/4 cup of sun dried tomatoes, julienned/sliced
- 2 tbsp Balsamic Vinegar
- 1 tbsp Soy Sauce
- 1/2 cup of Cream
- 250 grams of fav pasta
- 1 cup reserve pasta water
- 1/4 cup minced fresh parsley
Instructions
- Add thinly chopped onions to a pan of olive oil at medium heat. Cover generously with salt.
- Cook the onions down until caramelized, adding water as needed to keep them from sticking.
- Once onions are nearly ready add sliced garlic to the pan. This is also the time to start cooking the pasta.
- Stir into your golden and caramelized onions the cream, balsamic, soy sauce, herbs, red pepper flakes, and julienned tomatoes.
- Let the onions and sauce simmer for 5 minutes while the pasta finishes cooking.
- Strain the pasta reserving one cup of water.
- Fold the pasta into sauce keeping it on the heat. Add reserved water to maintain divine level of sauciness.
- Plate and top with optional parmesan.
Notes
It takes a long time to caramelize the onions down (30+ minutes – Paul may not be the fastest/best at this).
