Cranberry Scones

Ingredients

Units Scale
  • 2 1/4 cups flour
  • 2 tbsp sugar
  • 1 tbsp baking powder
  • 1/4 tsp salt
  • 1 1/2 cups fresh or frozen cranberries, chopped in half
  • 2 tbsp honey
  • 1 cup whipping cream
  • 1 egg

Top

  • 1 egg
  • turbinado sugar

Instructions

  1. Combine flour, sugar, baking powder & salt.
  2. Make a well in the center.
  3. Combine remaining ingredients (cranberries, honey, cream, egg) and pour into flour well.
  4. Mix until moistened.
  5. Knead 10-12 times.
  6. Pat into 2 – 1/2″ (thick) circles and cut each in 6 wedges.
  7. Brush with 1 egg + 1 T water.
  8. Sprinkle with sugar.
  9. Bake on greased sheet, 20-25 minutes, @ 375º F
